O charque é uma carne salgada de origem no nordeste do Brasil que, pela ausência de tecnologias de refrigeração da carne à época, o animal vacum abatido para retirada do couro, de bom valor de mercado, não tinha sua carne aproveitada adequadamente. Posteriormente, também passou a ser produzida e bastante apreciada no Rio Grande do Sul. É cohecida como carne-seca no sudeste do Brasil. More information...
